Juice of 2 lemons
600 g frozen blueberries
340 ml water
140 g sugar
Make simple syrup by dissolving the sugar in the water over medium heat. Place frozen blueberries in a bowl and pour the simple syrup over them and blend with a stick blender until smooth. Add the lemon juice and mix for a further minute. Place in the bowl of an ice cream maker or place in a plastic freezer container and set.
