This recipe is quick and so easy let me know how you get on
750 g chicken thighs
1 onion, chopped
3 cloves of garlic, chopped
4 medium potatoes, peeled and cut into quarters
1 tin of tomatoes
Salt and pepper to taste
Heat up a heavy bottomed pan and add 1tbsp of veg oil. Place the chicken skin side down and brown for 3-5 minutes, add salt, pepper, onion and garlic and cook for another minute without stirring. Turn the chicken over after a minute, letting the onion and garlic fall to the bottom and add the tomatoes, potatoes and 200ml of boiling water. Cover and let simmer over medium heat for 30 minutes or until the potatoes and chicken are cooked through.
