Celeriac Soup recipe Watch on our pod cast ” Hub Kitchen with Aida “

“I chose this simple soup because celeriac is full of vitamin c, phosphorus and potassium.
But you can  replace the celeriac  with carrots or parsnips.All of these vegetables are good for you. For some people the flavour of onion is too strong, so replace them with shallots or eliminate them completely. “

Celeriac Soup

50 g unsalted butter
1 celeriac, peeled and cubed
1 onion, peeled and cubed
1litre chicken or vegetable stock
Milk (optional)

Melt the butter and add the onion and celeriac. Sweat on a low heat for 10 minutes. Add the stock and simmer until the vegetables are soft. Blend with a stick blender and add more stock or milk to loosen.
